Ingredients

  • 2 large potatoes, cubed 1″
  • 1 tablespoon vegetable oil
  • 1/2 cup panko
  • 2 teaspoons curry powder
  • Salt and pepper, to taste
  • Oil, as needed for frying

Your potatoes should be boiled in water until they are soft, and then they should be immediately added to your mixing bowl. The other ingredients should be added one by one, and the potatoes should be mashed lightly. You will still want them to be slightly lumpy for texture. The mixture should then be shaped into small pancakes, roughly 2 inches in diameter and less than 1 inch thick. Pan fry them on low to medium heat until they are golden brown on both sides!
