  • 4 medium carrots
  • 1 garlic clove, minced

  • 1 lavash flatbread (soft, thin flatbread of Armenian origin; tortillas can be substituted)
  • 1 eggplant, chopped
  • Oil, for frying
  • 1/2 pound button mushrooms, chopped
  • 1 onion, chopped

Start making these vegan recipes by boiling the carrots in water until they are soft. Then, they should be grated. Next, mix the vegan mayonnaise, water, mustard, garlic, salt, and pepper together. The lavash bread should then be laid out and covered with the sauce. Fry the eggplant, mushrooms, and onion together until they are soft. Finally, all of the vegetables should be spread evenly over the bread. Let the bread stand in the fridge for 4 hours before slicing into 1” thick slices and serving.
