Vegan RecipesTarragon oil is one of those little secret weapons I keep in my arsenal in the kitchen. I chose to make it out of equal parts of olive oil, parsley, and tarragon, but the most prominent flavor in this oil is definitely the tarragon. The simple taste of this oil is a true treat for your taste buds. It offers notes of grassy anise, and the vivid color the herbs can be seen in its golden color. Personally, I prefer to use this oil as a finishing garnish for a number of dishes, including soups, open faced sandwiches, panzanellas, and it also makes a delicious option for salad dressing.

For an interesting twist on vegan poached (substitute) eggs, try drizzling the oil over the eggs once they are prepared. In truth, this oil can be used for just about anything. Go for it, and let me know in the comments section below if you come up with anything unexpected or offbeat.

This vegan recipe will make about 2/3rd a cup of oil, but you can easily double the ingredients if you need to make more, or halve it if you need to make less. Just remember to use the 1:1:1 ratio.

Here are the ingredients you’ll need to have to make this vegan recipe:

 

  •   3/4 cup / 12g tarragon leaves
  •   3/4 cup / 12 g flat-leaf parsley leaves
  •   3/4 cup / 180 ml extra virgin olive oil
  •   fine grain sea salt

In a medium sized saucepan, bring some water to a boil. Add plenty of salt, just like you would for pasta. Blanch the parsley leaves and tarragon for about 10-15 seconds, or until they are bright green in color. Remove them from the water quickly, drain, and move them to a bowl of ice water.

Drain once more and let the leaves air dry. In your food processor, puree the olive oil and leaves for about 90 seconds. Using the finest sieve you have on hand, separate the solids from the liquid, and transfer the oil to a jar. The leaves should be tossed out. Refrigerated, the oil will keep for about 2-3 weeks, but before you use it to cook with, make sure you bring it to room temperature.
