Vegan Recipes – Cinnamon Vanilla Sunflower Butter

Vegan DietDon’t worry. It’s not butter in the traditional sense. These vegan recipes take almost no time to prepare. If you have the ingredients on hand, then you can actually make it right now. My family loves to put it on toast, but I’ve also found that it works well as a spread on sandwiches or as a dip for apples or pears.

Here are the ingredients you’ll need to make these vegan recipes:

  • 2 cups / 225 g raw sunflower seeds
  • 1/4 cup / 60 ml sunflower oil, divided
  • 1/2 teaspoon fine grain sea salt, plus more as needed
  • 2 tablespoons vanilla bean paste (or seeds scraped from 2 plump vanilla beans)
  • 3 teaspoons ground cinnamon
  • zest of 1/2 a lemon, or to taste

To start preparations, begin by toasting the sunflower seeds at 325 degrees Fahrenheit until they are golden brown in color. You may need to stir them a few times to ensure that they toast evenly. After taking them out of the oven, let me cool for at least 10-15 minutes before moving on to the next step.

Once they’ve cooled, transfer them to your food processor and in the sea salt and a tablespoon of the sunflower oil. While the processor is running, add 2 more tablespoons of the sunflower oil. It can take some time, but it’s important to ensure that the mixture obtains a smooth, even consistency. After it reaches this consistency, add in the cinnamon and vanilla paste. At this point, if the butter is too thick, you can add a little more sunflower oil. Once finished, add more salt and lemon zest to taste.

This recipe will make about 1 ½ cups of the butter, and it should take less than 10 minutes of your time to make. I guarantee it’s going to be a hit among your vegan and non-vegan friends alike. Enjoy!
