This recipe is incredibly simple to make, and the butter makes a delicious addition to toast, but you can also choose to thin the consistency out so that you can add the butter to apples, pears, or even grilled sandwiches.

Finding plain, raw sunflower seeds can be a pain in the butt, but I’ve been able to successfully make this recipe with roasted seeds, both salted and unsalted. If you have to use sunflower seeds that have already been roasted, just leave out the salt that the recipe calls for. Instead, just opt to salt it to taste. Likewise, if your seeds are already roasted, just skip that step too.

To make these delicious vegan recipes, here are the ingredients you’ll need to gather:

  •  2 cups / 225 g raw sunflower seeds
  •  1/4 cup / 60 ml sunflower oil, divided
  •  1/2 teaspoon fine grain sea salt, plus more as needed
  •  2 tablespoons vanilla bean paste (or seeds scraped from 2 plump vanilla beans)
  •  3 teaspoons ground cinnamon
  •  zest of 1/2 a lemon, or to taste

Start making these vegan recipes by toasting the sunflower seeds in your oven at 325 degrees Fahrenheit until they are golden brown in color. After removing them from the oven, let them cool for about ten minutes.

Next, add the seeds to your food processor along with the sunflower oil and the sea salt. As the motor is grinding, slowly add in another 2 tablespoons of the sunflower oil. You are going to want to ensure that the mixture has nice, even consistency, and it will take some time for it to get there. Once the mixture starts to look even, you can go ahead and add in the vanilla paste and cinnamon. If the butter mixture looks a little thick to you, add the last of the tablespoon of oil. Add salt to taste and add the lemon zest.
