  • 1/3 cup low-fat soy milk
  • 1 tsp vinegar
  • 2 Tbs flax meal
  • 5 Tbsp water
  • 1 1/4 cups whole-wheat flour
  • 1/2 cup soy flour
  • 1 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 cup mashed bananas (about two very ripe medium bananas)
  • 1/2 cup applesauce
  • 1/4 cup chopped pecans

Start preparing these vegan recipes by preheating your oven to 325 degrees Fahrenheit. In a medium sized mixing bowl, combine the soy milk with the vinegar and set it aside. Next, heat your water in the microwave for approximately 30 seconds. In a separate bowl, the flax seed should be mixed with hot water and set aside.

The next step is to combine the flours, sugar, baking powder, and salt in another mixing bowl. In another bowl, combine the bananas, applesauce, soy milk and vinegar mixture, and the flax seed mixture together. Mix well. In the bowl with the dry ingredients, add the banana mixture and mix well. Add the chopped pecans to it and blend well.

Pour all of the combined ingredients into an 8” loaf pan, place it in the oven, and allow it to bake for one hour to one hour and 15 minutes, or until a toothpick inserted in the middle of the loaf comes out clean. Let it cool and then serve.
