Vegan Recipes – Vegan Hamburger Helper

These vegan recipes are great for when you do not have a lot of time to prepare meals in the kitchen. It tends to be fairly popular with kids, and if you wish to make these vegan recipes more of a whole foods recipe, you can substitute brown rice for the pasta.
- 8 oz. shell pasta cooked [we used gluten free brown rice pasta]
- 1 c. black bean or lentil burgers
- 1/4 c. vegetable broth
- 1/3 c. yellow onion diced
- 1 clove garlic minced
- 1 – 15 oz. can italian diced tomatoes
- 1 c. broccoli
- 1/3 c. carrot juice
- 1 Tb. Italian seasoning
- 1 c. vegan cheese sauce
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
Start preparing these vegan recipes by sautéing the onions, spices, and vegetable broth until the onions are tender. Add the broccoli, tomatoes, and carrot juice and continue to simmer until the broccoli is bright green in color and tender. The ingredients should be cooked in a medium saucepan over high heat.
For your final step in these vegan recipes, add the cooked pasta to the mixture and toss it well. Then, add the crumbled burgers and continue to toss until evenly coated. Top with the cheese sauce and then serve warm!
